How to make Allgäu cheese spaetzle?
Ingredients

Servings (default: 4)
- 500g flour
- 1 teaspoon salt
- 6 eggs
- 150 ml of mineral water
- 300 g Allgäu mountain cheese
- 3 shallots
- 2 tbsp butter
- 5 stalk (s) of parsley
Preparation
Step 1
Mix the
flour with 1 teaspoon salt. Add eggs and mineral water and mix everything with
a wooden spoon with a hole to form a smooth dough. The dough should bubble and
be thick. Let the dough rest for about 1 hour.
Step 2
Grate
mountain cheese. Peel shallots and cut into thin rings. Heat the butter in a
pan and brown the shallots in it.
Step 3
Bring
plenty of salted water to a boil in a large saucepan. Press the dough into the
water in portions with a spaetzle press (or scrape in from the board with a
spatula) and cook until it rises to the surface (takes 2-3 minutes). Lift out
the spaetzle with a slotted spoon and allow it to drain.
Step 4
Mix the
spaetzle, cheese and onions in a baking dish and bake in a preheated oven at
175 ° C for about 10 minutes. In the meantime, wash the parsley, shake dry and
chop. Sprinkle cheese spaetzle with it.
