How to make Mediterranean One Pot Tortellini?
Ingredients
Make sure to use the correct amounts when preparing the food.
Servings (default: 4)
- 1 zucchini
- 1 red pepper
- 1 yellow pepper
- 250 g of cocktail tomatoes
- 2 onions
- 100 g black olives
- 1 tbsp olive oil
- 500 g tortellini (cooling shelf)
- 600 ml vegetable stock
- 1 mozzarella
- 0.5 bunch of basil
- salt
- pepper
Preparation
Step 1
Wash and dice the zucchini. Wash the peppers, remove the seeds and cut into cubes. Wash tomatoes and cut in half. Peel and finely chop the onions. Cut the olives into rings.
Step 2
Heat the oil in a large saucepan and sauté the onions. Add zucchini and paprika and sauté briefly. Add the tortellini and pour the vegetable stock on top. Simmer over medium heat for about 10-15 minutes.
Step 3
Add tomatoes and olives 5 minutes before the end of the cooking time.
Step 4
Drain the mozzarella and cut it into small pieces. Wash the basil, pat dry and pluck the leaves.
Step 5
Fold the mozzarella into the tortellini, season with salt and pepper and garnish with basil.
