- 200 g of flour
- 2 eggs
- 150 ml milk
- 150 ml of mineral water
- 0.5 stick (s) leek
- 400 g mushrooms
- 1 orange
- 150 g feta
- 3 tbsp sunflower oil
- 100 g cream
- salt
- pepper

Step 1
You need:

Mix the
flour, eggs, milk and mineral water into a smooth batter and leave to rest for
15 minutes.
Step 2
Clean and
wash the leek and cut into rings. Clean the mushrooms and cut them into quarters or
eighths, depending on their size. Peel, fillet and dice the orange. Cut the
feta into small pieces.
Step 3
Heat 1
tablespoon of oil and sauté the leek. After 1 minute add the mushrooms and cook
at the same time. Add the cream and reduce it over medium heat. Add oranges and
feta and season with salt and pepper.
Step 4
Heat the
rest of the oil in a pan and fry four pancakes one after the other.
Step 5
Place the
vegetable filling in the middle of the baked pancakes, fold up and serve.
